Set Sail! Day 1 - Preparation for our Weekend Getaway - Friday, July 15, 2011!

Since I have last corresponded with you foodies....life has been good and life has changed for me....my new beau, Danny (whom I met on eharmony.com back in February 2011) and I recently purchased a 30' Catalina sailboat out of the San Pedro Marina (California).  Life with Danny is nothing less than adventurous - and now that we have our boat "life is sweet - and we are sailing down a different path."

We are both first-time sailors and for 3 months have been attending boat shows as well as looking for that perfect boat.  My duties on the boat primarily consist of steering and handling the wheel of the boat - while Danny sets the sails.

Preparing meals on a boat is somewhat challenging as we are limited to essential items and our icebox is less than desirable.

Our Kitchen - 2 burner stove, two small bar sinks, microwave and icebox.
Usually our icebox is packed full with prepared foods for our weekend getaways.

The key to cooking on a boat is "prep work ahead of time".  Although I have brought groceries to the boat directly from the store - I have found it's easier to work on "meal preparation" at home. Having all of my vegetables cut, sauces made, etc. is crucial and saves time so we can actually "enjoy the boat." We have no oven on the boat but I found I am in love with our gas grill (which we recently purchased) which is mounted on the outside of the boat.

I need to save my time for "sunning" and "sailing"!

For this particular weekend I have made the following menu:

Friday: dinner - Stuffed Pork Chops (feta cheese and prosciutto), leftover Kale and Spinach Saute and Boiled Red Potatoes with lemon, parsley, basil and butter.
Saturday: breakfast- cereal and milk, coffee.  lunch - rosemary chicken salad sandwiches and chips, lemonade.  dinner:  steak kebabs with vegetables; shrimp kebabs with fruit, rice pilaf, wine (Pinot Grigio).
Sunday: breakfast - yogurt and honey with granola, coffee.  lunch - salmon burgers.  dinner - at home in Pasadena, California.

Next post:  Recipes for Stuffed Pork Chops, Rosemary Chicken Salad, Steak and Shrimp Kebabs and Salmon Burgers.  Will report from my computer on "The Pelican" at the Cabrillo Marina, San Pedro.
