Potato Cake Breakfast Sandwich - 2 Ways - Turn a Not-So-Ordinary Breakfast Into Something to Wake Up To




Potato Cake #1 - Chicken Apple Sausage, Poached Egg, Feta Cheese and Smoky Sour Cream Sauce
Potato Cake #2 - Fried Prosciutto, Poached Egg and Pecorino Romano Cheese
Crispy, red potatoes lightly fried to create the "sandwich" feel......and simple but great ingredients to fulfill even your gloomy mornings....
Makes 4 sandwiches. 


Potato Cake:


10 small (petite) red potatoes, roughly peeled and coarsly grated. (I like to leave a little skin)
Salt 
Canola Oil


On a cutting board peel and grate potatoes. Mound potatoes in a pile. In a frying pan heat Canola Oil to about 1- 1/2 inch in pan.  Make sure oil is hot - medium heat works best. With a spoon, form a ball of potato and gently drop into pan. Immediately flatten with a spatula.  Sprinkle salt on each cake. Cook to a light golden brown on both sides then remove to cool on paper towels. Salt again.


Sausage/Prosciutto:
2 chicken apple sausage links (will make four sandwiches)
2 slices of prosciutto (also will make four sandwiches)


For your sausage, cut in half, then cut lengthwise. I cut the prosciutto to about the size of the potato cake. Fry sausage for about 5-6 minutes and prosciutto 2-3 minutes. Remove to paper towels for cooling.


Sour Cream Sauce:
8 oz. - sour cream
1 - 1/2 teaspoons sea salt
1/2 teaspoon white pepper
1 tablespoon Dijon mustard
2 teaspoons smoked paprika
1 - 2 tablespoons vegetable broth


In a small bowl combine ingredients.  Mix thoroughly - sour cream consistency can be thick or runny. If you want to make your sauce thinner, add 1 teaspoon of vegetable broth at a time to get right consistency.


Feta Cheese/Pecorino Romano Cheese:
1 tablespoon cheese for each sandwich


You can use any feta cheese - sun-dried tomato basil works well or you can use plain. Grate the Pecorino Romano cheese.


Eggs:
4 eggs


I like to lightly poach my eggs in a small saucepan. I boil the water (tablespoon of oil and salt)
then I turn down to a very slow simmer for about 5 minutes.  Each egg I crack in a glass pyrex cup then gently place in water. Cook for 5-7 minutes - remove with slotted spoon.
