Carrot, Raisin and Coconut Salad!


Busy weekend....attended Danny's grandson's baseball game in Oxnard...fun until it rained for 20 minutes!

Drippy mayo.....too many raisins....how many times have you had a carrot salad and this is what you have experienced - right?  I was meandering in my neighborhood and ran across a carrot raisin salad that I fell in love with..so I tweaked a few ingredients and came up this....love farmer's market carrots, golden raisins and the shredded coconut -  adds texture to this otherwise boring salad.


CARROT, RAISIN AND COCONUT SALAD




Ingredients - serves 3-4 as a side salad


2 cups grated carrots
1/3 shredded coconut
1/4 cup finely chopped walnuts
1/4 cup diced, dried cherries
1/3 cup golden raisins
1 tablespoon freshly squeezed lemon juice
1 - 1/2 teaspoons superfine sugar
1/8 cup "O" honey-apple vinegar* or any other fruit-flavored vinegar


In a medium mixing bowl, combine all ingredients.  Serve.


*My favorite vinegar today is "O" - Honey-Apple Vinegar.  Sold online or in gourmet food stores this flavor captures the sweetness and the tartness of what a good vinegar should be. Other favorites are their Pomegranate, Sherry and Citrus Champagne. Close behind that would be their Cassis.  Also worth trying are their olive oils - Blood Orange, Clementine and Jalapeno Lime are my top three in this category.
